Finding Flavour

Learn how to make master stocks and the mother five sauces of Classic cuisine, and you will be well on your way to cooking like a professional chef!

Classic food and sauces are almost entirely based on preparing stocks which are also known as the foundations for the standard mother sauces: bechamel; veloute; brown sauce; hollandaise and tomato.

In this class Chef Kevin Blakeman will explain how to make the master stocks and will demonstrate the five mother sauces, and then show a variation, giving examples of how to use them.

You will enjoy tastings of each of the sauces and sample dishes made with them, and be inspired to expand your cooking repertoire. You will take home recipes of each classic mother sauce and of dishes that use the sauces.

This new class is the second in a series of “classic chef skills toolbox” classes, the first being the popular Hands-On Knife Skills Class.

About Chef Kevin Blakeman:
Chef Kevin Blakeman is one of the lucky few to be trained in the UK as part of the Chef's Association’s specialised chef's course. He moved on to four years working at the Houses of Parliament cooking for the Prime Minister and The Queen to name a few. After becoming a head chef at the age of only 21 he found his way to New Zealand with his Kiwi partner. His Auckland C.V. includes Allely House and Auckland's Waitakere Estate. He is the Executive Chef of Mercure Hotel, Customs Street, Auckland. He can also be seen regularly appearing at the Hobsonville Market kitchen as well as his website.

Kevin has also developed and presents the popular Hands-On Knife Skills Class in association with Finding Flavour.
